Baking With Ch-ch-ch-Chia Seeds

Look who kept me company as I baked this evening. I’m not sure why he was so fascinated, but I enjoyed his supervision.

Tonight I made cinnamon chia granola (recipe here) and lemon chia bread. The bread is somewhat tart and very tasty. Not to mention simple and healthy. Recipe below if you want to give it a whirl.

Lemon Chia Bread
2 tbsp chia seeds
1/4 cup lemon juice (I squeezed mine)
1/2 cup rice milk (I used light vanilla)
1/2 cup margarine
1/2 cup sugar
1 1/2 cups unbleached white flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

350 degree oven. Combine chia seeds, lemon juice and rice milk. Let stand for 15 minutes.
Cream together margarine and sugar. Slowly add chia mixture and blend well.
Add dry ingredients and blend until just combined.
Scooped into a greased 8-inch loaf pan and bake at 350 for 45-50 minutes.
When taking loaf out of the oven, combine 2 tbsp sugar and 1 tbsp lemon juice and pour evenly over the top.
(I skipped the last step because I didn’t want the extra sugar. I didn’t miss it.)

(In spite of a reputation as a power-packing health food, chia seeds – for me – will forever mean infomercials, a catchy jingle and funky sprouted characters. Not unlike this awesome chia pug that I found on pinterest (source here).)
