I’m good with it.

Miss Violet sunbathed in the space between the storm and front doors today, stretching and using every square inch of space. And what didn’t fit naturally, she managed to cram in there. She’s such a mess. But she saw more sunlight than I did today. My day was spent at home doing laundry and baking cupcakes for a friend. Mucho margarita and lemon creme. Nice and relaxing…for the most part.

I’ve misplaced my beloved vegan cupcake cookbook, so I went online for recipes. I was able to find some nice plagiarizer for the book’s mucho margarita recipe, so no problem! I also found some “spring green” decorating sugar that looks like salt on top of the frosting. The lemon creme cupcakes proved to be more problematic. I had to use a new recipe (also vegan) because no one seemed to plagiarize that one. And I’ve gotta tell ya, I don’t hold out much hope that they turned out well.  I should’ve known I was in trouble when the recipe called for a POUND of tofu and an entire bag of organic, non-bleached sugar. I’m not kidding when I say that the batter had the consistency of oatmeal. The cupcakes looked (somewhat) normal after baking, but then there was the frosting. It had the consistency of applesauce dropped in sand. It was runny, coarse, grainy and altogether nasty. Oh, and it was a light brown. Exasperated, I poured it down the drain and went back online to find a new lemon frosting recipe. The first one I found listed the following ingredients first: cream cheese and butter. Yes, please. Thank you.
But tomorrow’s gonna be a good day. Wimbledon!

    I am impressed! That's a whole lotta work (and tofu) for cupcakes. Your margarita cupcake looks beautiful! I think the last time I tried making my own icing, I decided I would do that never again. I think I ended up trying to make it twice and then finally went and bought some pre-made icing which tasted way better.

  2. Undeserved praise coming from the person who has made pad thai from scratch. Talk about impressive!! I normally love making cupcakes and icing from scratch, but that lemon one was WAY too much work.
